Apple skillet Cake, my way

 

 

1 tablespoon butter or ghee, cow/goat

4 apples, peeled and sliced

About 2 Tablespoons sweetener, Agave, Maple Syrup, Honey, Coconut sugar

____Cinnamon

____Nutmeg

____Cloves

____Ginger

____Allspice

____Tablespoons Molasses

¼ to ½ cup raisins, prunes

¾ cup your flour mixture, ______________________

­­­­­about 1/3 cup sweetener, agave, maple syrup, honey, coconut sugar

1/8 teaspoon salt

2 eggs, chicken, duck or turkey

1 egg white 

1 ½ cups milk, _almond, rice, oat, or other______________

2 teaspoons vanilla extract, or other extract, almond, raspberry

 

Preheat oven to 375º

Melt the butter in a medium ovenproof skillet.  Add the apples & cook for 2 minutes.  Add sweetener, spices & raisins/prunes.  Cook, stirring for 5 minutes, or until apples are tender. 

Remove from the heat spread apples evenly over the bottom of the skillet.

Meanwhile, in a large bowl, combine flour, sweetener & salt.

In a medium bowl, combine the milk, eggs, egg white & extract.  Add to the flour mixture & stir just until blended.  Pour over the apple mixture in the skillet.

Bake 40 minutes, or until golden brown and puffed. Remove to rack to cool for 5 minutes.
