Buckwheat with Cucumbers, Parsley, and Pepitas

1-cup buckwheat

1-cup water

1-cup stock or broth (chicken, vegetable, etc.)

½ lemon zested and juiced

1 tsp. dried rosemary

1/8 tsp. pepper

¼ cup fresh parsley, chopped

½ an English cucumber, diced

¼ cup pepitas(pumpkin seeds) roughly chopped

 

Place 1 cup of buckwheat in a bowl, cover with water and let soak for at least 20 minutes.  Drain.

Bring water and stock or broth to a boil in a 2-quart saucepan.  Add drained buckwheat, cover and simmer for 20-25 minutes until liquid is absorbed.  The grains will be sticky, however after it is chilled down it will be less sticky.  Mix in lemon zest, seasonings and parsley then chill.  Once chilled mix in the diced cucumber and pepitas, serve.
